Hearts of Palm Salad
Hearts of Palm salad consists of tender palm hearts, nestled in a buttery bed of Bibb lettuce with crushed pistachos, radishes and goat cheese – all topped with an easy Dijon vinaigrette!

The perfect salad isn’t rocket science, but a really great salad has a balance of texture, flavor and color. This hearts of palm salad has all this, and more!
- The nutty flavor of the hearts of palm pairs beautifully with the tangy Dijon vinaigrette
- Crushed pistachios (you can use any nut you prefer) gives a nice crunchy texture to the soft butter lettuce
- A tiny bit of spice comes from the sliced radishes, which elevates the flavor profile to a different level
- The easy homemade Dijon vinaigrette gives the palm salad a nice hint of acidity
Ingredients
The basic premise of this hearts of palm salad is versatility! Feel free to substitute any of the ingredients with something similar.
- Butter lettuce (also called “Bibb”, “Boston” or “Living” lettuce) has very tender leaves
- Hearts of Palm – (these are buds, or stalks from the palm tree)- you’ll find canned hearts of palm at the grocery store, as well as jarred versions. Either will work in this salad recipe.
- Pistachios – shelled and crushed pistachio nuts enhance the nutty flavor of the hearts of palm stalk; you can substitute with any crushed nut you like (walnut, hazelnut) or sprinkle dry roasted & salted sunflower seeds over your palm salad
- Crumbled Goat cheese – this tangy cheese balances well against the nutty palm stalks. If goat cheese isn’t your thing, feel free to substitute with crumbled feta
- Radishes – at first glance, you might think “I don’t like radishes!” Well, just a few slices of this root vegetable give a tiny hint of heat to this summer salad. If you don’t prefer radishes, feel free to substitute with a few sliced grape tomatoes, diced red bell pepper or omit altogether
- Dijon vinaigrette – a basic homemade salad dressing that uses whole grain mustard, extra virgin olive oil, white balsamic vinegar, a hint of sugar, minced garlic, minced shallot, ground oregano and ground black pepper.
Tips for making hearts of palm salad
Making this salad doesn’t require much skill, however the quality of the ingredients are key.
- Use fresh butter lettuce; remove stem, rinse well and pat dry
- Drain and pat dry the hearts of palm; cut into thirds
- Use a high-quality olive oil for the Dijon vinaigrette salad dressing

Ingredients
Salad Ingredients
- 1 head butter lettuce , also called "Bibb", "Boston" or "living lettuce"
- 1 jar or can hearts of palm (about 6 spears)
- 4 medium radishes, sliced
- roasted & salted pistachios ,use as much as you like
- crumbled goat cheese , use as much or little as you prefer
Dijon Vinaigrette Ingredients
- 1 cup extra virgin olive oil
- ½ cup white balsamic vinegar
- 1 tablespoon minced shallot
- ½ teaspoon fresh garlic, grated
- 1 tablespoon whole grain Dijon mustard
- ¼ teaspoon ground oregano
- ½ teaspoon granulated sugar
- ¼ teaspoon ground black pepper
Instructions
Prep
- Rinse butter lettuce and remove stem; place in large salad bowl1 head butter lettuce
- Drain and pat dry hearts of palm and slice into thirds; slice radishes; mince shallot and grate garlic; crush pistachios; set aside1 jar or can hearts of palm, 4 medium radishes, sliced, 1 tablespoon minced shallot, ½ teaspoon fresh garlic, grated, roasted & salted pistachios
- In a small mixing bowl, combine and whisk together dressing ingredients; taste for salt1 cup extra virgin olive oil, ½ cup white balsamic vinegar, 1 tablespoon whole grain Dijon mustard, ¼ teaspoon ground oregano, ½ teaspoon granulated sugar, ¼ teaspoon ground black pepper
Assembly
- Arrange hearts of palm and radishes onto the lettuce bed
- Drizzle Dijon vinaigrette over salad; garnish with crushed pistachios and crumbled goat cheesecrumbled goat cheese
