Peel carrots and slice diagonally; place in a single layer in a microwave-safe baking dish with 1 tablespoon of butter; add enough water to cover the carrots halfway; cover and cook on high for 10-12 minutes (microwaves vary, so check the tenderness of the carrots at about 8-minutes)
1 lb organic carrots, 1 tablespoon butter, salted
In a medium saucepan on medium heat, melt butter; add brown sugar, honey, orange juice concentrate and cook until sugar is melted and the glaze thickens a little (about 5 minutes); remove from heat
3 tablespoons packed light brown sugar, 3 tablespoons butter, salted, 1 tablespoon honey (plain or hot honey), ⅓ cup frozen orange juice concentrate
Transfer steamed carrots to serving dish; drizzle the orange glaze over the carrots; gently toss the carrots to ensure they're covered with the glaze; season to taste with salt
salt to taste
Garnish with fresh chopped parsley and serve

Use leftover frozen orange juice concentrate for a pitcher of mimosa's!
