Baked enchilada dip made with red enchilada sauce, Mexican melting cheeses and a homemade Tex-Mex seasoning blend. Make it as mild or spicy as you like.
4ouncesOaxaca cheese, shredded(See recipe notes about the cheese)
4ouncesAsadero cheese, shredded
4ouncesQueso Muenster cheese, shredded
Tex-Mex Seasoning Blend
1½teaspoonsChili powder
1teaspoonGround cumin
½teaspoonGarlic powder
½teaspoonOnion powder
½teaspoonSmoky paprika
¼ - ½teaspoonMexican oregano (optional)
Instructions
In a small mixing bowl combine the seasoning ingredients; set aside
1½ teaspoons Chili powder, 1 teaspoon Ground cumin, ½ teaspoon Garlic powder, ½ teaspoon Onion powder, ½ teaspoon Smoky paprika, ¼ - ½ teaspoon Mexican oregano (optional)
In a big mixing bowl, combine remaining ingredients. Mix with electric mixer until well combined; transfer to small to medium size baking dish; bake @ 350℉ for 25 minutes or until hot and bubbly; remove and allow to rest 10-15 minutes before serving.
8 ounces Cream cheese, room temperature, ½ cup Sour cream, ½ cup Red enchilada sauce, mild, medium or spicy, 4 ounces Oaxaca cheese, shredded, 4 ounces Asadero cheese, shredded, 4 ounces Queso Muenster cheese, shredded
If you top the dip with shredded cheese, you may want to stir it into the dip after you remove it from the oven; that top layer of cheese makes the dip a bit difficult to get to with a tortilla chip.
Notes
About the cheeseI strongly recommend you buy Mexican melting cheese. It has a higher moisture content and melts beautifully versus regular cheese.Do not buy pre-shredded Mexican cheese; the coating on the cheese prevents it from melting and may result in an oily mess.If you up ut a layer of cheese on the top of the dip, you may want to stir it into the dip after you remove it from the oven. That top layer of cheese makes it tricky to get to the dip with a tortilla chip.
