Rinse and pat dry the strawberries; remove stems and core; dice into small pieces
1 cup diced strawberries
Put diced strawberries and honey into food processor; pulse a minute or two, scrape down the sides and pulse again another minute or two until the strawberries are almost liquid; transfer to mixing bowl or stand mixer
1 cup diced strawberries, 1 tablespoon honey
Add room temperature cheeses to mixing bowl; use the whisk attachment and whip until the mixture is smooth; refrigerate and cover until time to serve
Garnish with crumbled goat cheese and strawberry; Serve with Biscoff spiced cookies, water crackers, bagels or fruit

Notes
This yields about 2 cupsI think this sweet and tangy combination tastes best with a spiced cookie. I like Biscoff cookies which are usually in the gourmet deli section, or you can serve this with Archway Windmill cookies. If you want it sweeter, add a little more honey, but not too much or the mixture will get too runny.
