Rough cut dates and transfer to blender or food processor. Add remaining ingredients and pulse until smooth.
6 pitted Medjool dates, ¼ cup Dijon mustard, ½ cup olive oil, 1 small garlic clove, ¼ cup apple cider vinegar, ¼ - ½ cups water, ¼ teaspoon salt
Add the water in small increments; you may want to add more if you prefer a thinner consistency; add salt to taste (start with ¼ teaspoon).
Notes
Dates are sticky and dense. As you process or blend the ingredients, if the mixture looks too thick to you, add a little water in small increments until you reach your desired consistency. Note that adding water will dilute the flavor to a degree, so you might need to adjust the salt mustard or apple cider vinegar a bit.
