Maple Glazed Bananas

Broiled bananas with a cinnamon maple glaze.

  • 4 large bananas not too ripe
  • 1/3 cup brown sugar
  • 1 tablespoon granulated sugar
  • 2 tablespoons cinnamon
  • 2 tablespoons butter room temperature
  • 2 tablespoons maple syrup
  • oil for pan
  • 1/3 cup toasted coconut (optional)
  1. Toast coconut: place a skillet on the stove; medium high heat; add coconut; stir coconut continuously; allow coconut to brown slightly about 2-3 minutes; remove coconut from skillet and place in small bowl; set aside

  2. Preheat oven to broil; spray oven safe baking dish lightly with oil; set aside

  3. Combine brown sugar, butter, maple syrup and cinnamon in a bowl

  4. Slice bananas in half then slice each half lengthwise; place bananas in baking dish

  5. Brush cinnamon mixture over bananas

  6. Place under broiler for 6-8 minutes or until the cinnamon mixture begins to bubble and caramelize
