Broiled bananas with a cinnamon maple glaze.
Toast coconut: place a skillet on the stove; medium high heat; add coconut; stir coconut continuously; allow coconut to brown slightly about 2-3 minutes; remove coconut from skillet and place in small bowl; set aside
Preheat oven to broil; spray oven safe baking dish lightly with oil; set aside
Combine brown sugar, butter, maple syrup and cinnamon in a bowl
Slice bananas in half then slice each half lengthwise; place bananas in baking dish
Brush cinnamon mixture over bananas
Place under broiler for 6-8 minutes or until the cinnamon mixture begins to bubble and caramelize
