Ingredients

Fresh oysters Buttermilk Hot sauce Flour Cornmeal Creole seasoning Paprika

Drain oysters in colander  Do not rinse  Let sit for at least 15-minutes

Cover oysters with buttermilk Add hot sauce Stir well

Combine flour, cornmeal, Creole seasonings, paprika, salt and pepper

Dredge oysters in cornmeal mixture and place on wire rack

Heat oil to 325-350°F

Place oysters in a single layer in the hot oil

Cook 2-3 minutes Remove and place on paper towel

Serve with lemon wedges, tartar sauce, cocktail sauce or remoulaude!
