Equal parts fat & flour Medium low heat Whisk continuously Add milk in 1/2 cup increments
Add fat to hot skillet
Oil from chicken

Add an equal amount of flour to hot oil
Add 1/2 cup milk
Add remaining milk in 1/2 cup increments
Season with 1/2 teaspoon salt
Whisk in pepper
