Mixed Greens and Cornbread Casserole
You can’t get much more Southern than this Mixed Green and Cornbread Casserole! It’s got all the fixins’ of a complete Southern meal in one! Turnip and mustard greens, homemade cornbread, all tossed with cooked sausage, onion and a hint of hot pepper vinegar! I promise you, even those who hate greens will love this dish!
Greens are a Southern staple food and so is cornbread,so why not mix them together? Whomever came up with this recipe is brilliant, not only because it’s delicious, but it’s easy to make and a great addition to any potluck dinner!
I found this recipe scribbled on the back of a Southern Living envelope in a bag of recipes I inherited from my Grandmother. Her handwritten “Greens Casserole” did not include hot pepper sauce or sausage; however, after experimenting, I added these two ingredients and they really make the dish shine!
What Kind of Greens Do I Use for the Casserole?
I use Glory brand canned Seasoned Mixed Greens, which includes turnip, mustard and collard greens in a seasoned brine. You can opt for a single green, however I found the straight turnip greens to be a bit strong. Another popular brand of canned mixed greens is Margaret Holmes. I don’t have those in my grocery store, so I use Glory brand.
Can I Use Fresh Greens Instead of Canned?
Fresh greens work well in this recipe, however you’ll want to cook enough to yield about four cups, plus a little of the cooking water. I highly recommend using canned greens, simply because it’s easier and tastes just as good as fresh!
How Much Does One Pound of Greens Yield?
One pound of raw greens yields about three cups of cooked greens. For this recipe, you need about 1.5 lbs. of fresh greens.
What Ingredients are in Greens and Cornbread Casserole?
The ingredients in this Southern casserole are:
- Canned mixed greens with liquid
- Cooked sausage and onion
- Prepared cornbread (homemade or a packaged mix)
- Cream soup (mushroom, chicken or celery)
- Salt, pepper, pepper sauce
Can I Make this in Advance?
This dish can be made in advance and frozen until ready to serve. Simply combine all ingredients, cover and freeze. On the day of serving, bake at 350ºF for 30-40 minutes, or until top begins to brown.
